Green Papaya Salad

This salad is made from cooked green (unripe) papayas instead of the raw salad made with green or slightly ripe papaya. The papayas should be green inside and out. If they are starting to turn just a little bit orange inside that is ok as long as they are very firm.


Green Papaya
Red (or yellow) onions
Green (and yellow and red) peppers
Olive oil, apple cider vinegar
Optional: olives or sauteed mushrooms


  1. Thinly slice onions and peppers (with mandolin/grater)
  2. Marinate onions and peppers with salt, pepper, vinegar and oil
  3. Peel and boil papaya in 1/8 slices until cooked but still firm (not falling apart)
  4. After cooled, thinly slice (1/4 inch or 5 mm) and marinate with vinegar, oil, salt and pepper
  5. Allow to sit for 10 min, then combine with marinated onions and peppers
  6. Optional: add slice olives, lightly sautee sliced mushrooms
