Breadfruit casserole

This St Lucia recipe is a unique Balenbouche creation, using breadfruits and papayas grown on the estate.


1 Breadfruit
2-3 green papayas
1/2 lbs local spinach
2-3 onions
4-5 cloves of garlic
3 – 4 peppers (optional)
6 eggs
3 cups dairy or coconut or Almond milk
1 cup flour
1 – 2 cups grated cheese
spices: oregano, thyme, marjoram
oil or butter to line the tray


  1. Quarter breadfruit, boil in large pot of water
  2. Peel and boil papaya in 1/8 slices
  3. Thinly slice onions and peppers, lightly salt and pepper
  4. Wash and cut spinach
  5. Mix eggs, milk, crushed garlic, spices, ½ of the cheese
  6. Carefully stir in flour, mix well
  7. Slice breadfruit and papaya into long ½ inch (12 mm) pieces
  8. Grease casserole pan, add small amount of batter to cover pan
  9. Layer breadfruit, papaya, onions and peppers, adding batter between every layer
  10. Pour remaining batter and cheese on top
  11. Cover with tin foil and bake at 350 F
